About

For Parmesan to be classified as Parmigiano Reggiano, both the production of milk and its transformation into cheese have to happen in just a few Italian provinces: Reggio Emilia, Modena and Bologna. The milk is from pasture-reared organic herds, which is transported to the dairy within two hours, and used without additives to create the cheese’s unique, authentic flavour.
