Shiitake mushrooms are an East Asian variety, much loved for their savoury, almost nutty flavour and rich, velvety texture. Their earthy taste makes them a good pairing with the richness of beef or autumnal venison, and their hearty texture brings welcome bite to casseroles or Asian broths and stir-fries alike. It can be hard to find organic Shiitake mushrooms, so look no further – we deliver these straight to your door.

These mushrooms are grown on an organic substrate block made from sawdust and rye.

How to prepare

Shiitake mushrooms are a great way of giving backbone to a vegetarian stir-fry. Combine with broccoli and tofu, then season with ginger, chilli, hoisin and sesame oil. If you’ve got them, throw in a handful of cashew nuts or noodles for good measure.

Storage

Store in the fridge and aim to eat them within a few days. We deliver ours in paper punnets, so you shouldn’t end up with the slimy mess that can arise with mass-produced mushrooms in plastic. Don’t worry if they have a little fuzz on – it’s not mould. It’s called mycelium, and develops on fresh, healthy mushrooms that are starting to fruit.
