How to prepare

Ideal for a slow-cooked stew, casserole or pie filling. You can dice it into chunks or braise it in larger pieces. Season generously and fry until browned on all sides. Mix with the veg, herbs and liquid of your choosing and cook gently on a low hob or in a low oven (150˚C/Gas 2) for 2-3 hours, or until completely tender. The meat should be on the verge of falling apart.
