This recipe may be low effort but the results are utterly delicious. We’ve taken the elements of a classic Thai Massaman curry and created a simple traybake, bursting with aromatics. it's packed with veg including spinach, pepper, red onion and sweet potato, so you'll be smashing your five-a-day!
