Grilled sweetcorn with black garlic butter

Grilling corn in their husks is one of our favourite ways to cook them. It is best done on a BBQ, but also works under a grill. Black garlic is a much-prized culinary ingredient: heat-aged until the cloves turn soft, mellow and fantastically sweet. If you can’t get hold of it, use dried garlic.

Ingredients

  • 2 sweetcorn cobs
  • 2 tbsp butter
  • 3 cloves of black garlic

Method

Prep time: 30 min
Cooking time: 20 min
  • Step 1

    Soak the corn in their husks in water for at least 30 mins. This stops the corn burning on the BBQ and adds moisture, so it steams the corn inside perfectly.

  • Step 2

    Make your black garlic butter by mixing the black garlic cloves with the butter in a bowl. If you don’t have black garlic, then crush or finely chop dried garlic cloves and use this instead. Use more sparingly, as it is more pungent.

  • Step 3

    Once soaked for 30 mins, place the cobs on a hot BBQ. Keep turning them every now and then. The leaves will blacken - this is what should happen, and doesn’t mean they are burnt. You will be able to tell when they are done – they should feel a little soft when squeezed.

  • Step 4

    When done, peel away the husks. Be careful, they will be hot. Peel away the fibres too.

  • Step 5

    Smear your black garlic butter over the corn while it is still hot, and enjoy right away.
