Middle Eastern lamb marinade

A beautiful marinade for an alternative Sunday roast. Smear over a lamb roasting joint on Saturday night and leave to marinade overnight.

Ingredients

  • small bunch fresh mint
  • small bunch fresh coriander
  • 1 orange, zested and juiced
  • 2 garlic cloves, finely chopped
  • ¼ tsp each smoked paprika, cinnamon, cumin and ground coriander
  • ¼ tsp salt
  • ¼ tsp allspice
  • olive oil

Method

Prep time: 10 min

  • Step 1

    Blitz everything together with enough olive oil to make a paste. Use as a marinade for an alternative Sunday lamb roast.
