Pak choi and sprouting beans

This meat free stir-fry makes a great quick dinner with a bowl of fluffy jasmine rice. Pak choi (or bok choi) can be boiled, steamed, sautéed or added to stir-fries, soups or salads.

Ingredients

  • 1 tbsp sesame oil
  • 3 spring onions, sliced
  • 2 garlic cloves, cut in slivers
  • 2cm piece fresh ginger
  • 1 carrot, cut into matchsticks
  • 125g sprouting beans
  • 1 pak choi, shredded
  • 50g unsalted cashew nuts
  • 2 tbsp dry sherry
  • 3 tbsp light soy sauce
  • 1 tsp cornflour
  • 1 tsp honey
  • 35ml cold water
  • salt and pepper

Cooking time: 10 min
  • Step 1

    Heat the oil in a large wok and fry the onions, garlic, ginger and carrot for 2 minutes. Add the sprouting beans and fry for another 2 minutes. Add the pak choi and nuts and stir fry until the leaves are just wilting.

  • Step 2

    Quickly mix all the remaining ingredients in a jug and pour into the wok. Stir to coat the vegetables in the sauce, season and serve immediately.
