Parschnapps (Parsnip vodka)

We love to get creative with the drinks we make and serve in our farm restaurant, The Field Kitchen, with an emphasis on using the fruit and veg from the farm, as well as what we can find in the fields and hedgerows. Parsnips works perfectly as a 'schnapp' because of their natural, earthy sweetness. We think this drink is so delicious on its own that we serve it simply over ice, to round off a meal in the restaurant. It's really easy to make, we hope you enjoy it at home.

Ingredients

  • 1ltr vodka
  • 200g sugar
  • 2 large parsnips (or 3 small)

Method

Prep time: 10 min
  • Step 1

    Wash the parsnips, chop of the bottom ends and grate them; you don't need to worry about peeling them.

  • Step 2

    Transfer the grated parsnips into a clean jar and add the sugar. Pour in the vodka and put the lid on the jar, so it's sealed tight.

  • Step 3

    Shake the jar to start dissolving the sugar. Leave in a cool, dark place for 3 - 4 weeks, remembering to shake the jar occasionally to ensure the sugar dissolves fully.

  • Step 4

    Strain the mixture through muslin, or a clean tea towel if you don't have any. Taste to check the sweetness, adding more sugar if you wish. Bottle and serve over a little ice.
