Plum & goat’s cheese filo tartlets

These delicate tartlets are easy to make and a great way of celebrating the short UK plum season through a savoury recipe. Fantastic eaten warm or served cold at a fancy picnic.

Cook's notes

Slightly under ripe plums are best for this recipe.

Ingredients

  • 3 sheets of ready-made filo pastry
  • 120g soft goat’s cheese
  • 40g butter, melted
  • 100ml double cream
  • 2 egg yolks
  • 2 plums

Method

Prep time: 15 min
Cooking time: 25 min
  • Step 1

    Preheat oven to 170°C/Gas mark 3. Grease 6 holes in a muffin tin with melted butter using a pastry brush. Cut the filo into pieces big enough to line the hole with 1cm or so excess at the top. Place in the holes, brush with melted butter and continue layering the pastry sheets until each one has at least 4 layers.

  • Step 2

    Bake the pastry sheets for 12 minutes until the bottoms have browned a little.

  • Step 3

    Crumble the goat’s cheese into a bowl and mix in the egg yolks, cream, salt and pepper. Cut the plums into thin slices.

  • Step 4

    Spoon the cheese mixture evenly into the filo cases. Arrange a few plum slices on top in a nice round, rose-like pattern.

  • Step 5

    Bake in the oven for 18-20 minutes until slightly golden on top. Remove from the tray as soon as cool enough to handle. Serve warm or allow to cool and refrigerate.
