Rhubarb relish
Tart and tangy, this easy to make condiment goes well with so many things, try it in sandwiches, with salads or to compliment your next barbecue. If you're not vegan, this also works wonderfully with cold meats, fish or a sharp cheese.
Ingredients
- 225g rhubarb, chopped
- 125g sugar
- grated zest and juice of 1 orange
- 2 jalapeno peppers, or one dried chilli pepper, deseeded and chopped
- 2 shallots, finely chopped

Step 1
Put all the above in a heavy pan and bring to the boil, simmer for about 20 minutes to thicken. Serve with meat, rice or vegetable stir fry.
