Roasted miso edamame beans

It may seem madness to cover the pods with sauce when you are only set to discard them but your fingertips with pick up all that flavour as you pop the beans from the pods and snack on them - that is why the sauce is so intensely salty and savoury.

Ingredients

  • 400g edamame beans in their pods
  • 2 tbsp untoasted sesame oil
  • 2 tbsp brown rice miso
  • 1 tbsp tamari or soy sauce
  • 1 tbsp mirin or rice wine vinegar
  • 1 garlic clove, finely chopped
  • ½ tbsp chilli sauce – optional

Method

Prep time: 10 min
Cooking time: 15 min
  • Step 1

    Preheat your oven to 200˚C. Make sure the pods have been removed from their stalks and throw them into a large roasting tray with the sesame oil. Pop them into the oven to roast for 10 mins.

  • Step 2

    Meanwhile mix the miso, tamari, mirin and garlic together in a small bowl to make a paste. Add the chilli sauce too if you want some heat.

  • Step 3

    Remove the beans from the oven and stir in the miso paste until they are thoroughly coated. Return to the oven for a final 5 minutes until the sauce has darkened and the beans inside are tender.

  • Step 4

    Transfer to a bowl and serve warm. Use your fingers to pop them from the pods to snack on.
