Stir-fried purple sprouting broccoli and mushrooms

This healthy veggie stir-fry is specially good made with purple sprouting broccoli when it's is season. It can be turned into a vegetarian main by serving it with egg noodles or brown basmati rice. For an optional extra put in 2 tablespoons of sherry when adding the soy sauce.

Ingredients

  • 500g purple sprouting broccoli, split into florets, stems sliced
  • 500g mushrooms, finely sliced
  • 250g carrots, cut into matchsticks
  • 1 bunch spring onions, finely sliced
  • 1 garlic clove, crushed
  • 4 tbsp oil
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Method

Prep time: 5 min
Cooking time: 10 min
  • Step 1

    Stir fry the spring onions and garlic in hot oil for 2 minutes.

  • Step 2

    Add the broccoli and carrot and fry for another 2 minutes.

  • Step 3

    Stir in the mushrooms and fry for 2 minutes then add the soy sauce and cook for a further 2 minutes.

  • Step 4

    Spoon over the sesame oil, season with pepper and remove from the heat. Serve with rice or noodles.
