Vegan Caesar salad dressing

Silken tofu is soft, crumbly and easily blended into a smooth creamy consistency. Perfect as a dairy or egg-based dressing substitute. The taste is neutral, so it is a blank canvas for any flavours you want to add. The tofu replaces most of the oil too, so it is also lower in fat than a classic Caesar dressing. It will store well in the fridge for 2-3 days.

Ingredients

  • 300g silken tofu (Clearspring make a good one)
  • ½ tbsp Dijon mustard
  • 1 garlic clove, chopped
  • 1 tbsp capers, plus 1 tbsp of brine
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1 tbsp olive oil
  • boiling water, as needed

Method

Prep time: 5 min
  • Step 1

    Place all the ingredients in a food processor and add 2 tablespoons of boiling water.

  • Step 2

    Blend until smooth, stopping to scrape down the sides every so often. You may need to add a dash more boiling water as you go – you want a thick dressing the consistency of yogurt.

  • Step 3

    Taste and tweak with salt and pepper to your liking.
