Beautiful local milk, plus the traditional cheesemaking skills of the Beckett family on Belton Farm, Shropshire, make this organic red Leicester something really special.

It’s got a slightly sweet, almost caramel flavour, which becomes more robust as the cheese matures. The finished wedge is rich, savoury and nutty, with a firm texture and cheerful orange colour (given by annatto, a natural colouring made from the seeds of the achiote tree).
